Recipe Wednesday: Soft Oatmeal Cookies

Today I am sharing my absolute favorite cookie recipe. This recipe comes from my Swiss Cookbook that my grandma gave to me for my wedding. The first time I made these I said, "I'm never making any other kind of cookie again." I make these for every ward activity, and every family activity. People love me because of these cookies.
So the moral of the story is, make these cookies right now. I'm going to be making them today actually. :)
Soft Oatmeal Cookies
1 cup butter
1/2 cup white sugar
1 1/2 cup brown sugar
1 teaspoon vanilla
2 eggs
1/2 teaspoon salt
1 teaspoon baking soda
1/4 cup boiling water
3 cups flour
2 1/2 cups oats
1 pkg chocolate chips (or 1/2 pkg chocolate, and 1/2 pkg butterscotch chips)

Preheat oven to 400 degrees
Cream butter, sugars, salt, vanilla and eggs until light and fluffy.

Dissolve baking soda in boiling water, and add to sugar mixture (this is the secret to making them so soft)
Add flour, oats and chocolate chips.
Bake for 5-6 minutes until they are barely light brown (don't overcook!!)

Cookies will finish baking a little bit on the pan.
Cool on wire rack.

Warning: If you bring these cookies to something, you will be asked to make them again (and again, and again).
